The restaurant has begun serving fresh, domestically sourced bluefin tuna across all lunch and dinner courses. Unlike most tuna, which is typically frozen, this rare offering is delivered fresh, resulting in a softer texture and more refined flavor. With fresh domestic bluefin tuna still limited in availability, the restaurant places a strong emphasis on careful sourcing.

 

 

The akami (lean cut) highlights the tuna’s deep flavor with a subtle acidity, while chutoro (medium cut) and otoro (fatty cut) are served as nigiri, where the warmth of the sushi rice allows the fat to gently melt, creating a balanced, melt-in-your-mouth experience.

 

To complement the fish, the restaurant uses four types of sushi rice made with three varieties of red vinegar and one white vinegar. Each blend is adjusted to bring out different levels of depth, richness, and acidity, ensuring harmony with every topping.

 

 

Another highlight of dining at Sushi Sakura is its thoughtfully designed space.
